Trimmed up and deckle removed. Let’s see how it goes, this thing barely fit in my grill lol

Curious, what did you pay, price per lb?

I just remove the deckle/mohawk fat, non cooking/edible fat. The other excess fat can pulled off easily when it's 80% cooked.

Looks like beef prices on the rise! Look at these local auction prices.

well looking at my receipt I paid $125 for everything didn’t break it out but that included 2 lbs of bacon, 3 lbs of chicken, and about 2.5 lbs of sausage. Worse case scenario I’d guess it was $100 for 16 lbs. so that puts it right around $6.25 a pound.

I didn’t think it was too bad of a price, but yeah I only removed the deckle and silver skin and left about 1/4” of fat to cut off once it was cooked. Been eating it with spicy pickles and bbq sauce for the last 2-3 days and am getting tired of it lol

Took the kid out for dinner tonight to celebrate her making the varsity v-ball team. Not bad for a sophomore. Anyhow went to the Goat. It’s pretty good and the old fashioneds are on point. No pics.

One perk of the East Coast is the legit delis. I always enjoy a real finding new delis for lunch.

Today was an Italian deli that was so authentic I swear they use Italian air. Smelled like cheap cologne and wine. The meatball was amazing.
