Easter (late) Lunch is a twice smoked ham for a family meal.
Then tonight goes on the brisket for coming off tomorrow after lunch for a dinner meal. I have to make room for the beef half that is coming in the next couple weeks.

The twice smoked ham turned out really good. The 18" skillet is perfect for the second stage of the process. Now prepping for brisket getting smoke over post oak tonight.
The brisket turned out pretty good. I took a sampler plate to my sammich maker's office and everyone wanted the rest of it. Needless to say it is a good day when my meat can make that many women happy.

Don't touch your eye after eating these.. fuck that did not feel good. Eating a ham and cheese sandwich with some of them and made the mistake of touching the corner of my eye.
