Going to be a good afternoon; smoking a tri tip and three racks of ribs for a family gathering today. The tri tip is getting smoked like a small brisket, two racks of ribs are getting the "warm" treatment with spicy rub and hot honey, and the last rack is a sweet rub for those that enjoy more sweet than heat.
Smoked a panache with some nacho flavored sausage for dinner. The panache was really good; the sausage is ehh. I will probably smoke this style of cut a few more times to get a better feel for it.
