Going to be a good afternoon; smoking a tri tip and three racks of ribs for a family gathering today. The tri tip is getting smoked like a small brisket, two racks of ribs are getting the "warm" treatment with spicy rub and hot honey, and the last rack is a sweet rub for those that enjoy more sweet than heat.

Commercial shrimp season started yesterday, fresh shrimp off the boat and blue & rock crabs off our pier.

Shrooms, Shrimp, crab, onion.

Caught over 50 crabs in the last 24 hours.

Just bought some more fresh 8/10ct large bay shrimp and medium 16/17ct.

Doing some VA tests today over south of Dallas. I was there early enough to find a cheesesteak for lunch. For Texas this was damn good.

Picked up some shrimp and crab from the dock. Did a little boil last night.

Smoked a panache with some nacho flavored sausage for dinner. The panache was really good; the sausage is ehh. I will probably smoke this style of cut a few more times to get a better feel for it.
